Ultimate Sushi Bake Recipe

Ingredients
  

Rice Layer

  • 3 cups uncooked sushi rice
  • 3 1/2 cups water
  • 1/2 cup rice vinegar
  • 1/4 cup granulated sugar
  • 1 teaspoon salt

Seafood Layer

  • 1 pound imitation crab meat, shredded
  • 8 ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha (or to taste)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil

Toppings

  • 1 avocado, sliced
  • 1/4 cup furikake seasoning
  • 2 green onions, thinly sliced
  • sesame seeds, (optional)
  • seaweed snacks, (optional)

Instructions
 

  • Prepare the Sushi Rice: Rinse the rice in a fine mesh strainer under cold water until the water runs clear. This removes excess starch.
  • Add the rinsed rice and water to a pot. Bring to a boil, then reduce heat, cover and simmer for 15 minutes. Remove from heat and let stand for 10 minutes without opening the lid.
  • While the rice cooks, combine rice vinegar, sugar, and salt in a small saucepan. Heat on low until the sugar dissolves. Do not boil.
  • Transfer the cooked rice to a large bowl. Pour the sushi vinegar mixture over the hot rice. Gently fold it in to ensure each grain is coated. Let the rice cool slightly.
  • Create the Seafood Mixture: In a separate bowl, mix the softened cream cheese, mayonnaise, sriracha, soy sauce, and sesame oil until smooth.
  • Stir in the shredded imitation crab meat. Ensure it's well coated with the mixture. Set aside.
  • Assemble and Bake the Sushi Bake: Preheat the oven to 350°F (175°C).
  • Spread the cooked sushi rice evenly into the bottom of a 9x13 inch baking dish. Press it lightly to create a base.
  • Spread the crab mixture evenly over the rice. Ensure it covers the entire surface.
  • Bake for 20-25 minutes, or until the topping is golden brown and bubbly.
  • Remove from the oven and let cool slightly. Top with sliced avocado, furikake seasoning, and green onions. Add seaweed snacks and sesame seeds if preferred.
  • Serve warm with seaweed sheets for scooping, if desired.
