Ingredients
  

Swordfish

  • 4 swordfish steaks (6-8 ounces each)

Swordfish Marinade

  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic minced
  • 1 teaspoon dried oregano

Baked Swordfish Toppings (Optional)

  • 1/2 cup cherry tomatoes halved
  • 1/4 cup Kalamata olives sliced
  • 1 teaspoon dried basil

Pan-Seared Swordfish

  • 2 tablespoons butter
  • 1 sprig fresh rosemary

Lemon-Butter Sauce

  • 4 tablespoons butter
  • 1/4 cup lemon juice
  • 2 tablespoons chopped parsley

Mediterranean Vegetables

  • 1 zucchini diced
  • 1 red bell pepper diced
  • 1/2 red onion sliced
  • 1 cup cherry tomatoes halved

Instructions
 

  • Combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl.
  • Marinate swordfish steaks for at least 30 minutes.
  • Preheat grill to medium-high heat.
  • Brush marinated swordfish steaks with marinade.
  • Place swordfish on the grill and cook for 4-6 minutes per side, or until cooked through (internal temperature reaches 145°F or 63°C).
  • Remove from grill and let rest for a few minutes before serving.
  • Preheat oven to 400°F (200°C).
  • Place marinated swordfish steaks in a baking dish.
  • Top with cherry tomatoes, Kalamata olives, garlic, and basil. Season with salt and pepper.
  • Bake for 12-15 minutes, or until the fish is cooked through (internal temperature reaches 145°F or 63°C).
  • Serve immediately.

  • Add garlic and cook for 1 minute.
  • Stir in lemon juice and parsley. Season with salt and pepper.
  • Simmer for 2-3 minutes, or until slightly thickened.
  • Pour over cooked swordfish and serve.
  • Heat olive oil in a large skillet over medium heat.
  • Add zucchini, red bell pepper, and red onion. Cook for 5-7 minutes, or until slightly softened.
  • Add cherry tomatoes and oregano. Season with salt and pepper.
  • Cook for another 2-3 minutes, or until the tomatoes are tender.
  • Serve with cooked swordfish.
