Batter Ingredients

  • 1 1/2 cups Corn Kernels (canned, frozen, or fresh)
  • 1/2 cup All-Purpose Flour
  • 1/4 cup Cornmeal
  • 2 tablespoons Sugar
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 large Egg
  • 1/4 cup Milk

Frying

  • Vegetable Oil For deep frying

Instructions
 

  • In a large bowl, combine the flour, cornmeal, sugar, baking powder, and salt.
  • In a separate bowl, whisk together the egg and milk.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  • Gently fold in the corn kernels until evenly distributed.
  • Let the batter rest for about 10 minutes to allow the baking powder to activate.
  • Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C).
  • Carefully drop spoonfuls of the batter into the hot oil. Do not overcrowd the fryer.
  • Fry the corn nuggets for 2-3 minutes on each side, until golden brown and crispy.
  • Remove the corn nuggets with a slotted spoon and place them on a paper towel-lined plate to absorb excess oil.
  • Serve hot and enjoy!

Notes

For extra flavor, add a pinch of cayenne pepper or some chopped jalapeños to the batter. Serve with ranch dressing, honey mustard, or your favorite dipping sauce.
