Ingredients
  

Oatmeal Mixture

  • 1 ½ cups rolled oats old-fashioned
  • 1 ½ cups boiling water

Cake Batter

  • ½ cup unsalted butter softened (1 stick)
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt

Cream Cheese Frosting (Optional)

  • 8 ounces cream cheese softened
  • ½ cup unsalted butter softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

  • Step 1: Prepare the Oatmeal Combine the rolled oats and boiling water in a bowl. Let it sit for 20 minutes to soften the oats.
  • Step 2: Cream Butter and Sugar In a large bowl, cream together the softened butter and brown sugar until light and fluffy (3-5 minutes with an electric mixer).
  • Step 3: Add Eggs and Vanilla Beat in the eggs one at a time, then stir in the vanilla extract. Ensure each egg is fully incorporated before adding the next.
  • Step 4: Combine Dry Ingredients In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  • Step 5: Mix Wet and Dry Ingredients Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Step 6: Add Oatmeal Mixture Stir in the softened oatmeal mixture until everything is well combined. The batter will be slightly thick.
  • Step 7: Bake the Cake Pour the batter into a greased and floured 9x13 inch baking pan. Bake in a preheated oven at 350°F (175°C) for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. The cake should be golden brown.
  • Step 8: Cool and Serve Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve. Enjoy!
