Moroccan Mint Tea

Ingredients
  

  • 2 tablespoons Chinese green tea such as gunpowder tea
  • 4 cups water
  • 1-2 cups fresh spearmint leaves large bunch
  • 3-5 tablespoons sugar or to taste

Instructions
 

  • Place the green tea in the teapot. Pour about 1/2 cup of boiling water over the tea. Swirl it around and then discard the water. This removes any bitterness from the tea.
  • Add the fresh spearmint leaves and sugar to the teapot. Use a generous amount of mint for an authentic flavor.
  • Fill the teapot with the remaining boiling water. Place it on the stovetop over medium heat.
  • Allow the tea to simmer gently until the sugar dissolves. This usually takes about 2-3 minutes. Remove from heat and let it steep for at least 5 minutes to allow the flavors to meld.
  • Traditionally, Moroccan mint tea is poured from a height. This creates a frothy top. Pour the tea into a glass and then back into the teapot. Repeat this several times to mix the flavors and create the foam.
  • Pour the tea into individual glasses, holding the teapot high to create a good froth. Serve hot and enjoy the refreshing taste of Moroccan mint tea.

Notes

Use fresh, high-quality spearmint for the best flavor. Adjust the amount of sugar to your preference. Pouring from a height is essential for creating the characteristic foam. Steep the tea long enough to allow the flavors to fully develop. Serve immediately after brewing to enjoy the tea at its best.
