Ingredients
  

Beef

  • 2 lbs beef tips cut into 1-inch cubes

Noodles

  • 16 oz egg noodles wide or medium

Sauce

  • 4 cups beef broth
  • 1 packet onion soup mix
  • 1 tsp garlic powder
  • 1 medium onion chopped
  • 1 tbsp olive oil
  • To taste salt
  • To taste pepper
  • 2 tbsp Worcestershire sauce
  • 2 tbsp cornstarch mixed with 2 tbsp cold water

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Add beef tips and sear on all sides until browned (about 5-7 minutes).
  • Place the seared beef tips into the crockpot. Add chopped onion, beef broth, onion soup mix, garlic powder, Worcestershire sauce, salt, and pepper. Stir well to combine all ingredients.
  • Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours. Check the beef for tenderness.
  • Stir in the egg noodles. Mix cornstarch with cold water to create a slurry. Pour the cornstarch slurry into the crockpot and stir well.
  • Cover and cook on high for another 30 minutes, or until the noodles are tender and the sauce has thickened.
  • Serve hot, garnished with fresh parsley if desired. Enjoy your comforting and flavorful meal!

Notes

Sear the Beef: Searing the beef tips adds a depth of flavor that you won't get otherwise. Don't skip this step!
Don't Overcook the Noodles: Adding the noodles too early can result in mushy noodles. Wait until the beef is tender before adding them.
Adjust Seasonings: Taste the sauce before adding the noodles and adjust seasonings as needed. Therefore, add more salt, pepper, or garlic powder to suit your taste.
Thicken the Sauce: If the sauce isn't thick enough, add more cornstarch slurry. Ensure the cornstarch is mixed with cold water to avoid clumping.
