  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas about 2-3 medium bananas
  • ½ cup chopped walnuts or chocolate chips optional

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. This usually takes about 3-5 minutes with an electric mixer.
  • Beat in the egg and vanilla extract until well combined.
  • Add the mashed bananas and mix until just combined. Be careful not to overmix.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Again, avoid overmixing.
  • If using, stir in the chopped walnuts or chocolate chips.
  • Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
  • Bake for 8-10 minutes, or until the edges are golden brown and the centers are set.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For best results, use very ripe bananas. Store cookies in an airtight container.
