Corn Ribs Ingredients

  • 4 ears fresh corn on the cob husks removed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper optional, for heat
  • to taste salt
  • to taste black pepper
  • Fresh cilantro chopped, for garnish
  • Lime wedges for serving

Instructions
 

  • First, start by shucking the corn and removing all the silk. Next, stand each ear of corn on its end. Afterward, carefully slice down the center to halve it. Subsequently, cut each half into quarters or thirds, depending on the size of the corn. These will be your “ribs.”
  • In a bowl, whisk together the olive oil, smoked paprika, garlic powder, chili powder, cumin, cayenne pepper (if using), salt, and black pepper. After that, toss the corn ribs in the mixture, ensuring they are evenly coated. Hence, this step is crucial for maximum flavor.
  • Preheat your air fryer to 400°F (200°C). Then, arrange the corn ribs in a single layer in the air fryer basket. Make sure not to overcrowd them. Furthermore, you may need to cook them in batches. Afterward, air fry for 12-15 minutes, flipping halfway through, until they are tender and slightly charred.
  • Once the corn ribs are cooked, remove them from the air fryer and garnish with fresh cilantro. Serve immediately with lime wedges for squeezing over the top.

Notes

Adjust seasoning to your taste. Feel free to add more or less of any spice. Cook the corn ribs in batches to ensure they cook evenly and get crispy.
