Ingredients
  

  • 2 pounds Potatoes peeled and cubed (Yukon Gold or Russet)
  • 6 cups Broth vegetable or chicken
  • 1/2 cup Butter salted or unsalted (1 stick)
  • 1 teaspoon Salt or to taste

Instructions
 

  • Peel and cube the potatoes into roughly 1-inch pieces. Ensure they are all similarly sized for even cooking.
  • In a large pot or Dutch oven, combine the cubed potatoes and broth. Bring the mixture to a boil over medium-high heat. Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the potatoes are very tender and easily pierced with a fork.
  • Remove the pot from the heat. Add the butter and salt. Use an immersion blender to partially blend the soup until it reaches your desired consistency. Alternatively, you can use a potato masher for a chunkier texture.
  • Taste and adjust the seasoning as needed. Serve hot and enjoy!

Notes

For a richer flavor, use homemade broth. Otherwise, a good quality store-bought broth will work just fine. Don't over-blend the soup. Leaving some chunks of potato adds texture.
