Ingredients
  

  • 3 large Overripe Bananas mashed
  • 2 large Eggs
  • 1 cup Self-Rising Flour
  • 1/2 cup Granulated Sugar or preferred sweetener

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a loaf pan.
  • In a large bowl, mash the overripe bananas with a fork until smooth.
  • Add the eggs and whisk well.
  • Incorporate the sweetener of your choice.
  • Slowly add in the flour, mixing until just combined. Do not overmix.
  • Pour the batter into the prepared loaf pan.
  • Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the loaf from the oven and let it cool in the pan for about 10 minutes.
  • Transfer the loaf to a wire rack to cool completely before slicing.

Notes

Use overly ripe bananas for the best flavor and moisture. Do not overmix the batter. Let the bread cool completely before slicing.
