Instructions
Preheat oven to 350°F (175°C). Grease a loaf pan.
In a large bowl, mash the overripe bananas with a fork until smooth.
Add the eggs and whisk well.
Incorporate the sweetener of your choice.
Slowly add in the flour, mixing until just combined. Do not overmix.
Pour the batter into the prepared loaf pan.
Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
Remove the loaf from the oven and let it cool in the pan for about 10 minutes.
Transfer the loaf to a wire rack to cool completely before slicing.
Notes
Use overly ripe bananas for the best flavor and moisture. Do not overmix the batter. Let the bread cool completely before slicing.
