  • 2 very ripe bananas, mashed about 1 cup
  • 1/3 cup unsalted butter, softened (67g)
  • 3/4 cup granulated sugar (150g)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour (180g)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk or sour milk (120ml, see instructions below)

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan. Alternatively, line the pan with parchment paper.
  • Cream Butter and Sugar: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Use an electric mixer for the best results.
  • Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined. Ensure there are no streaks of egg yolk in the mixture.
  • Mash the Bananas: In a separate bowl, mash the ripe bananas until smooth. You should have about 1 cup of mashed bananas.
  • Combine Wet and Dry: Add the mashed bananas and buttermilk to the butter mixture. Mix until just combined.
  • Mix Dry Ingredients: In another bowl, whisk together the flour, baking soda, and salt. This ensures the baking soda is evenly distributed.
  • Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients. Mix until just combined. Be careful not to overmix.
  • Pour into Pan: Pour the batter into the prepared loaf pan. Spread evenly with a spatula.
  • Bake: Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Cool: Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Buttermilk Substitute: Add 1 1/2 teaspoons of lemon juice or white vinegar to 1/2 cup of milk. Let it sit for 5 minutes.
Vanilla Extract Substitute: Use 1/2 teaspoon of ground cinnamon or a different extract like almond or maple.
